London Olympics: Pimm’s Cup

With the Olympics being hosted in the lovely city of London of course we had to bring you one of their classic cocktails: Pimm’s Cup!

Pimm’s:

Pimm's No. 1 Cup was created in 1840 by a bartender named James Pimm at an oyster bar in London's financial district. He blended gin with quinine and various herbs, and the drink was initially served as a digestive tonic in a tankard. The company claims that the original recipe of the liqueur is a trade secret known to only six people.

In 1859, he began selling Pimm's No. 1 commercially and the drink became a must-have concoction among the fashionable socialites of England. After the WWII, Pimm's brand added No.2 (Scotch-based), No.3 (brandy-based), No. 4 (rum-based), No.5 (rye-based) and No.6 (vodka-based). Although it is hard to find these Pimm's today as only No. 1 and No. 6 are produced today.

Originally produced in the city of London, today the production has moved to the Scottish Cameronbridge Distillery. Although the cocktail is still seen as an English summer afternoon drink, it has also become the drink of Wimbledon, gaining the similar reputation of what Mint Julep is to the Kentucky Derby.

 

Pimm's Cup
- 1 1/4 oz Pimm's No. 1
- 3 oz Lemonade (European lemonade is a carbonated drink similar to Sprite/7up)
- 7 up
- Garnish: Cucumber
(Optional: Mint leaves and an orange slice)

Fill a tall 12 oz glass with ice and add Pimm's #1 and lemonade. Top with 7up and garnish with a slice of cucumber. You can also use lemon soda to replace lemonade and 7 up.

Watermelon Fizz

100 Calories

1.0 oz. Tequila
3.0 oz. Watermelon
0.1 oz. Simple Syrup
0.1 oz. Soda water
5 Cilantro pieces
Squeeze of lime
1 Bamboo spike

Muddle watermelon with cilantro leaves. Add ice, simple syrup, and tequila. Shake vigorously and pour all contents into a rocks glass. Garnish with a piece of watermelon in a bamboo spike

 

 

 

Skinny Colada

170 Calories

2 oz. SKYY Infusions Coconut
¼ oz. SKYY Infusions Pineapple
2 oz. Club soda
Splash of pineapple juice
Squeeze of lemon

Mix over ice in a highball glass.

 

 

 

Garden Fresh Summerita

150 Calories

1 oz. X-Rated Fusion Liqueur
1 oz. Cabo Wabo tequila
Juice of half a lime
3 sprigs fresh cilantro
3 thin slices of fresh cucumber
3 thin slices of a fresh jalapeño pepper
Cucumber wheel for garnish

Combine all ingredients in a cocktail shaker (except cucumber wheel) filled with ice and shake vigorously. Pour into a chilled glass and garnish with cucumber wheel.

 

 

 

 

Skinny Bikini

1 oz. X-Rated Fusion Liqueur
1 ½ oz. SKYY Infusions Coconut
1 oz. Diet lemon-lime soda
3 oz. Light cranberry juice
Shredded coconut

In a cocktail shaker filled with ice, combine X-Rated, rum, and cranberry juice and shake vigorously. Strain into an ice cube filled glass and top with shredded coconut for garnish.

4 oz. Peach Tea
Peach slice for garnish

Red, White, Booze! Patriotic Cocktail Recipes

The 4th of July festivities are so close you can almost smell the BBQ on the grill, hear the kids splashing in the pool, and taste the ice cold drinks with the little umbrellas in them.  From our team here at JC Bartending we want to stress the importance of being safe during the holiday festivities and encourage the moderate consumption of alcohol and the use of a designated driver or a taxi service. With all that being said the 4th of July is a time to celebrate and JC Bartending is always ready for a good party!

Here are some perfectly patriotic cocktails to try this 4th of July to quench thirsts and impress your guests!

The Fourth

The Fourth

    • 1 oz Watermelon Schnapps
    • 1 big splash cranberry juice
    • 1 very thin slice jalapeno or serrano pepper
    • 1 slice lemon
    • 1 slice lime
    • 1 1/2 oz tequila
    • 1/4 oz blue curacao
    • 1/2 oz simple syrup
    • Watermelon wedge, for garnish (optional)

Directions

Mix the schnapps and cranberry juice in a shaker; pour into an ice-filled glass.

Muddle the jalapeno pepper, lemon and lime slices, tequila, blue curacao and simple syrup (to make a batch, dissolve sugar in equal parts hot water and chill) in the shaker. Slowly strain into the glass over the red layer. Garnish with watermelon, if desired.

    • 1/3 Grenadine
    • 1/3 Crème de Cacao
    • 1/3 Blue Curacao

Directions

When prepared properly this shot will look red, white, and blue, and taste like a chocolate covered cherry. First pour the grenadine, then the Crème de Cacao then the Blue Curacao into a shot glass.

It's as simple as filling an ice cube try with water and dropping pieces of blueberries or rasberries in each space, then freezing! Great touch for those non-alcoholic drinks as well!

Alcohol Infused Desserts

Trend Alert: Alcoholic Cupcakes

What could be better than dessert and a drink?  A drink flavored dessert!  A new trend that seems to be popping up everywhere is alcohol infused cupcakes.  Just about any drink you can think of has now been made into a delicious cupcake and JC Bartending wants to share a few recipes with you!

Cosmopolitan Cupcakes with Cosmopolitan Buttercream Frosting

Ingredients:

  • 1/2 cup butter room tempcosmo cupcake
  • 2 cups sugar
  • 2 eggs room temp
  • 1/2 tsp salt
  • 2-1/2 tsp baking powder
  • 3 cups all-purpose flour
  • 1/4 cup buttermilk
  • 1 1/4 cup Cosmopolitan ( recipe to follow)
  • zest of 1 lime
  • Red paste or gel food coloring.(optional, if you would like a stronger reddish tint in the cake)

Directions:

  1. Preheat the oven to 350F. Line muffin pans with cupcake papers.
  2. With a mixer, beat together the butter and sugar until fluffy.
    Add the eggs 1 at a time and beat until well combined. Add the lime zest
  3. Combine all dry ingredients in a separate bowl and set aside
  4. 1 ½ cups cosmopolitan in a separate bowl.
    Add in 1 cup each of the dry and wet mixtures alternately, beating on low until the whole mixture is well combined.
  5. Bake at 350 F for 18-22 minutes
  6. Cool for 10 minutes in pan.

For glaze:

  1. 1/2 cup cosmopolitan
  2. Heat the cosmopolitan over med heat until thickened and slightly reduced.
  3. Brush with cranberry/vodka glaze when cupcakes are still slightly warm.
    When cupcakes are completely cooled, frost with Cosmo Buttercream

Cosmopolitan Buttercream Recipe

Ingredients:

  • 3 sticks or 1 1/2c butter room temp
  • 4 c confectioner’s sugar
  • 1 tbsp meringue powder ( optional)
  • pinch salt
  • 1 tsp lime zest
  • 3-4 tbsp of the Cosmopolitan (or more until you reach desired consistency)
  • red food coloring

Directions:

Cream the butter until light and fluffy. Add the powdered sugar one cup at a time beating well with each addition. Add the meringue powder and the salt. Mix in the zest. Add the Cosmopolitan one tablespoon at a time until you reach desired consistency.

 

Corona Cupcakes

Ingredients for the Cupcakes

  • 3/4 cups unsalted butter, room temperaturecorona cupcakes
  • 1-3/4 cup sugar
  • 2-1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs, room temperature
  • 1 tsp vanilla
  • 1/2 tsp lime zest
  • 1 cup Corona beer, plus more for brushing on tops
  • 1/4 cup milk
  • Lime wedges

Instructions for the Cupcakes

  1. Preheat oven to 375 degrees and line 24 muffin tins with cupcake liners.
  2. In a medium-sized bowl, whisk together flour, baking powder, and salt.
  3. In the bowl of an electric mixer, beat together the butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add eggs, beating after each addition then add the vanilla and zest.
  5. Combine milk and beer and alternatively add this mixture and the flour mixture to the butter/sugar mixture with the mixer on low speed, starting and ending with the flour.
  6. Fill the cupcake liners 2/3 full and bake for 18 minutes, or until cake tester comes out clean.
  7. When cupcakes are done, poke holes in the tops of the cupcakes with toothpicks and brush some beer on each while still warm.

Ingredients for the Citrus Frosting

  • 12 oz cream cheese, cold
  • 6 tbsp butter, at room temperature
  • 1 tbsp freshly squeezed lime juice
  • 1 tsp lime zest
  • 4 cups powdered sugar

Instructions for the Frosting

  1. Cream together the cream cheese and butter in an electric mixer until smooth and creamy, about 2-3 minutes.
  2. Add the citrus juice and zest and gradually add the powdered sugar until combined. Beat until smooth for about 2 minutes.
